  • Local ingredients meet exotic flair at Vancouver World Chef Exchange
Winter in Vancouver is perfect for cozying up and indulging in nourishing dishes fresh from the earth - especially when the kitchen team is visited by an acclaimed overseas chef. On Monday, January 22, Burdock & Co will host an exclusive Dine Out Vancouver Festival event - part of the 2018 Vancouver World Chef Exchange - which treats diners to a multi-course feast prepared by Executive Chef Andrea Carlson in collaboration with Chef Fumihiro Matsumoto and Sommelier Kenji Kawamura of Kantera Restaurant in Tokyo.

Chefs Carlson and Matsumoto will ignite the Burdock & Co dining room with visually stunning and impeccably flavoured dishes. The one-night-only menu will combine Burdock & Co's contemporary West Coast cuisine with Kantera's authentic Japanese flair, creating an east-meets-west dining experience of palate-pleasing surprises and delights. Sommelier Jesse Walters and Mr. Kawamura will curate sake and natural wine pairings to complement each course. Guests can select from two seatings, each lasting 2.5 hours; the first begins at 5:45pm, and the second at 8:30pm.

"I was recently in Japan, and on our first night we happened upon Kantera. It was the most amazing dining experience, and we returned again at the end of our trip" says Chef Carlson. "Like myself and Jesse, Mr. Kawamura is a natural wine enthusiast and he shared with us a selection of incredible local wines. It is an honour to team up with him and Chef Matsumoto for this special evening."

Each item on the event's exclusive menu will blend Chefs Carlson and Matsumoto's favourite culinary inspirations while incorporating sustainable seafood and ingredients grown in B.C. Tickets cost $203.75 per person and include the multi-course dinner, welcome cocktail, wine pairings, tax, gratuity and ticketing fees. Limited seating is available, so interested diners are encouraged to reserve tickets online through Tickets Tonight before the event sells out. Kitchen bar seats are available on a first-come, first-served basis.  Please arrive early for your reservation to receive seats at the bar.
