Yellow Cucumber Pickle

    This recipe prepares an Indian pickle made of cucumber using Dosavakaya method.

    Dosavakaya is a popular South Indian pickle preparation made with yellow cucumber, red chilli powder, mustard powder, and salt.

    Ingredients

    • 1 chopped cucumber

    • 1½ tbsp red chilli powder

    • 1 tbsp mustard powder

    • A pinch of fenugreek (methi) powder

    • 5 crushed garlic pods

    • A pinch of turmeric

    • ½ tsp crushed pepper

    • Salt as per taste

    • Juice of 1 lemon

    • ½ tsp mustard seeds

    • ½ tsp cumin seeds

    • 3 red chillies

    • A pinch of asafoetida (hing)

    Preparation

    • In a bowl, add the chopped cucumber, red chilli powder, mustard powder, a pinch of fenugreek powder, crushed garlic pods, pinch of turmeric, crushed pepper, salt and lemon juice, and mix it well.

    • In a pan, fry mustard seeds, cumin seeds, red chillies, and a pinch of asafoetida. After it cools down, add it to the pickle. The pickle is now ready and can be served with rice; it is a tangy accompaniment with other Indian dishes.
