Cinnamon Nutty Apple Crumble

    Fruit crumble is the ultimate comfort food and fond memories come flooding back every time I eat it. All too often there is never enough fruit and the crumble isn’t crunchy enough, so I’ve remedied it and this is my recipe for a sweet crumble loaded with sweet sticky apples topped with lots of crunchy nutty crumble.

    Serves 2
    Cook time: 40 minutes

    Ingredients

    ½ apple, I like braeburn, peeled, cored and cut into bite size pieces
    Zest of 1 orange
    Good squeeze of orange juice
    1 tbsp brown sugar
    20 g butter, cold and cut into small cubes
    40 g plain flour
    2 tsps oats (optional)
    Good pinch of cinnamon powder (optional)
    Few pistachios and hazelnuts, roughly chopped, or your fave nuts

    Preparation

    Preheat the oven to 200°C/400°F/gas 6. In an oven proof dish/large ramekin, mix the apples with the orange zest, orange juice and half the sugar.

    Make the crumble topping by rubbing the butter into the flour using your fingertips. When it resembles breadcrumbs stir in the oats (if using), cinnamon (if using), nuts and the remaining sugar. Sprinkle it evenly over the fruit and pop in the oven for 30 minutes.

    I’m not a fan of custard so I serve mine with ice cold cream or ice cream, but do as you please.
