Sablefish with Aji Verde, Charred Greens & Crispy Pappadum

  • Sablefish with Aji Verde, Charred Greens & Crispy Pappadum

Ingredients

For Sablefish: 
4 fillets 
Salt 
1 tablespoon oil 

For Aji Verde:

1 onion, sliced 
2 garlic cloves 
1 tablespoon ginger 
1½ cups coconut milk 
1 tablespoon white vinegar 
1 tablespoon lemon juice 
1 tablespoon miso 
1 teaspoon sugar or honey 
1 cup spinach 
¼ cup cilantro 

Vegetables:

Bok choy, mushrooms, oil, salt 

Directions

1. Lightly salt sablefish. Let it sit for 10–15 minutes. 
2. For the sauce, sauté onion, garlic, and ginger until soft. Add coconut milk, vinegar, lemon juice, miso, and sweetener. Simmer 10–12 minutes. Add spinach and cilantro, then blend until smooth. Season. 
3. Sauté vegetables in a hot pan with a little oil until browned and tender. 
4. Cook sablefish in the oven at 200°C/400°F for 10–12 minutes until just cooked. Fry the pappadum until crisp.

Pan-fry the marinated paneer slices on a grill pan or a non-stick pan till golden brown marks appear. Do not over cook and harden the paneer. Heat the sauce. Place most of the tomato sauce in an oven-proof flat dish or platter. Arrange steaks. Sprinkle the remaining sauce on the steaks. Sprinkle topping mixture.
