Opened on January 26, 2026, Mr. & Mrs. Sambar Kitchen is the realization of a dream shared by partners Vijay and Balaji - two chefs whose combined decades of experience have culminated in a restaurant dedicated to one simple philosophy: serve South Indian food exactly the way it is meant to be served. No shortcuts, and certainly no watering down flavors.
"We don't ask customers how spicy they want their food," Vijay says with a smile. "If we change the spice level to suit everyone, we lose the authenticity. We want people to experience South Indian food the way we grew up eating it."
It is a bold approach, especially in a market where restaurants often adapt recipes to suit local palates. But authenticity is the very foundation on which Mr. & Mrs. Sambar Kitchen has been built.
For Vijay, the journey began over two decades ago when he arrived in Vancouver as an international student. He worked in restaurants across the Lower Mainland, cooked for celebrities, and quietly nurtured one dream- to someday open a restaurant that celebrated the food he grew up with.
That dream found the perfect partner in Balaji.
A graduate of Hotel Management in 2007, Balaji grew up inspired by his uncle, a chef whose passion for cooking sparked his own interest in the culinary world. His career took him through restaurants and international cruise ships before bringing him to Canada in 2018. Together, the pair knew exactly what they wanted to create: not just another Indian restaurant, but one that proudly represented the rich culinary traditions of Tamil Nadu.
At the heart of their menu, alongside rava dosas, mutton bone soup, uttapams, and more, is the dish that has quickly become their signature: Ambur Biryani.

Unlike the more familiar biryanis made with basmati rice, Ambur Biryani is prepared using Seeraga Samba rice, a short-grain aromatic rice native to Tamil Nadu that absorbs spices beautifully and creates a flavor profile unlike anything else. Alongside it sits their equally popular Chennai-style biryani, giving diners two distinct regional experiences.
The response has been overwhelming. Vijay recalls one customer who ordered the mutton Ambur Biryani and became emotional after his first few bites. "He told us he hadn't eaten a biryani this authentic anywhere in North America," Vijay says. "He was almost in tears because it reminded him of home."
Even the restaurant's name has a story behind it. The owners originally planned to call it ‘Sambar Kitchen,’ a nod to Vijay's mother's signature sambar recipe that inspired the restaurant. But feeling the name was a little too common, they decided to add a twist.
"We added 'Mr.,' and then realized, 'Without Mrs., there is no Mr.,'" Vijay laughs. And just like that, Mr. & Mrs. Sambar Kitchen was born: a name that's as warm and welcoming as the food they serve.
For Vijay and Balaji, authenticity extends far beyond the food. Hospitality is just as important.
Every guest is welcomed with water, a warm smile, and staff who are happy to explain unfamiliar dishes and regional specialties. It's the kind of service that reflects South Indian hospitality—genuine, unhurried, and deeply personal.
"We want people to leave knowing they'll always get authentic food here," says Vijay. "More importantly, they'll have the same great experience every single time.
That consistency has become the restaurant's promise.
In a city where Indian restaurants are plentiful, Mr. & Mrs. Sambar Kitchen has found its identity by staying true to its roots. It doesn't try to be everything to everyone. Instead, it celebrates the bold flavors, cherished family recipes, and culinary traditions that have defined South Indian cuisine for generations.
