Fried Idli Chaat

Ingredients
- Leftover Idli: 4pcs
- Oil: 1 tbsp
- Mustard Seeds: 1/2 tsp
- Chana Dal: 1 tbsp
- Urad Dal: 1 tbsp
- Curry Leaves: 2 stems
- Hing: 1/4 tsp
- Red Chilli Powder: 1/2 tsp
- Turmeric Powder: 1/4 ts
- Sambar Masala: 1/2 tbsp
- Sugar: 1/2 tsp (optional)
- Curd (sweetened)
- Tamarind Chutney
- Green Chutney
- Pomegranate
- Sev
- Chaat Masala
- Coriander Leaves
Procedure
- Take the leftover idlis and cut them into bite-sized pieces.
- In a pan, heat oil and add mustard seeds, chana dal, urad dal, hing, and curry leaves. Allow them to sizzle and pop.
- Next, add all the spices and the cut idlis. Cook this mixture for a few minutes until it's well combined and heated.
- Place the masala idlis in a serving bowl, then top them with sweetened curd, tamarind chutney, green chutney, chaat masala, pomegranate seeds, sev, and fresh coriander leaves.
- Serve and savour this delightful dish. Enjoy!

Serve with greens, half a lemon and the Dijon mustard-yogurt sauce (For the sauce; sauté the garlic, let it cool and mix with whisked yogurt, remaining half of the Dijon mustard, coriander, mayonnaise and lemon juice, check for seasoning).
