Lavender Shortbread

    Ingredients

    • 200 gms butter
    • 250 gms flour
    • 75 gms cornflour
    • 105 gms icing sugar (separated 90 gms and 
    15 gms)
    • 2 gms salt
    • Lavender extract
     

    Preparation 

    • Take butter at room temperature and add salt. In a separate bowl, mix the corn flour and flour well. Add icing sugar to it and mix. Add the dry ingredients to the butter and mix well.
     
    • Pour onto an 11x11 tray and bake for 30 minutes at 350 degrees Fahrenheit. Before putting it into the oven, it is a good idea to mark the required size onto the dough so it is easy to cut later. 
     
    • Once baked, take it out of the oven and cut when still hot. Sprinkle 15 grams of icing sugar after it cools down. Store in airtight container at room temperature.

    Wild Mushroom Biryani

    Wild Mushroom Biryani
    This impressive dish does require a little extra effort that a normal curry but all it needs to go with it is a simple raita and if you can then a green or salad on the side but anything more would detract from the biryani. I like to use a few different types of mushroom so that there are different textures as well as flavours, choose those you like and if your budget allows, buy a few wild, special mushrooms, if not stick to shiitake, oyster and large chestnut mushrooms. Balance the flavour of your sauce using the cream or tomato puree and season knowing that the rice is barely seasoned.
