Soba Noodles with Mushrooms & Tofu

  • Soba Noodles with Mushrooms & Tofu

Ingredients: 

2 bunches of soba noodles (boiled as per package instructions) 
 
For the Sauce: 

2 tablespoons soy sauce 
2 tablespoons chili sauce 
1 teaspoon sugar 
4 teaspoons balsamic vinegar 
 
For the Stir-Fry: 

1 tablespoon olive oil 
1 cup mushrooms, sliced 
A pinch of salt 
1 tablespoon fresh ginger, minced 
2-3 green chilies, finely chopped 
3-4 garlic cloves, minced 
1 cup extra-firm tofu, cubed 
Green onions, to garnish 
Avocado (optional) 

Directions: 

1. Cook Noodles: Boil soba noodles as per the package instructions. Drain and set aside. 
2. Prepare the Sauce: In a bowl, mix soy sauce, chili sauce, sugar, and balsamic vinegar. 
3. Stir-Fry: 
a. Heat olive oil in a pan. Add mushrooms with a pinch of salt and sauté until tender. 
b. Stir in ginger, green chilies, and garlic. Cook for 1-2 minutes. 
c. Add tofu cubes and cook until lightly golden. 
d. Add cooked soba noodles and pour the prepared sauce over them. Toss everything until well combined. 
4. Serve: Garnish with green onions and serve hot. Add avocado slices on the side, if desired.
